NHC Chefs Enjoy Sushi and Washoku Masterclass with Renowned Experts

North Hertfordshire College’s Level 2 and 3 Catering students recently enjoyed a remarkable opportunity to learn from sushi and washoku experts through a masterclass from the Tokyo College of Sushi and Washoku.

The session saw our learners develop their understanding of the cultural significance of sushi, rice, and Washoku (traditional Japanese cuisine). Our budding chefs watched on as Chef Yama and Chef Yoshi demonstrated their talent in creating truly beautiful food, from delicately prepared sushi and sashimi to a stunning swan carved from fruit.

The opportunity arose following our learners’ recent success at the Zest Quest Asia 2024 national finals, where Freddie, Kajus, and Luke walked away with two awards and associated prize packages. They’ll soon be visiting the Tokyo School of Sushi and Washoku themselves for a week-long course – a truly amazing learning opportunity.

Jen Alsheikh, who is currently working towards their Level 2 Professional Cookery qualification with North Hertfordshire College, summarised the experience by saying: “During the workshop, the representatives from the Tokyo School of Sushi and Washoku enlightened us about the characteristics of Japanese cuisine and the history of sushi. They demonstrated Japanese knife skills, highlighting the distinctions that mark it from other world cuisines, and showcased various types of sushi and sashimi. I thoroughly enjoyed the experience.”

We’re pleased to see the positive impact that the experience has had on our student chefs, raising their aspirations and inspiring them to think even more creatively about what they can achieve in their work. Level 3 Professional Cookery student Kacper Rudzinski told us: “[The session] was a rare opportunity, and it left me fascinated by the chefs’ precision and skill. From the delicate slicing of fish to their incredible knife skills, every aspect of their craft was executed to perfection. As I watched, I gained a deeper appreciation of sushi and washoku. I feel incredibly fortunate to have been able to have a taste of traditional Japanese cuisine.”
