North Hertfordshire College’s Anthony Gascoigne (Catering tutor) and Dave Brett-Lavelle (Catering Assessor) recently took part in a filming day with the Grande Cuisine Academy, adding to the platform’s selection of demonstration videos!
The Grande Cuisine Academy is a free-to-access online learning platform which was launched to support student chefs, apprentices, and chef lecturers with learning new skills and to offer guidance. The platform hosts a range of resources that help inspire young chefs, ranging from culinary skills videos to guidance on topics such as mental health and wellbeing. All the videos are created by and for lecturers, meaning the content is directly related to the curriculum and the skills needed for students to progress into the industry.
Both Anthony and Dave were recorded preparing and cooking a variety of pasta dishes as well as a risotto. These videos will soon be added to the Grande Cuisine Academy’s online library, helping young chefs across the country to brush up their skills and learn some top tips.
Anthony said of the experience: “It was great to be part of this experience with the Grande Cuisine Academy and to be able to contribute to the development of the chef lecturers and the next generation of chefs. Massive thanks to Dave for supporting on the videos. Working as a team certainly eased the pressure… once those cameras go on, it’s a different ball game. All in all, a successful day!”
