OUR CATERING STUDENTS TOOK PART IN THE ZEST QUEST ASIA TILDA CHALLENGE FINALS

Last month, our Level 3 Professional Cookery students Todd Woolston and Josh Davies took part in the Zest Quest Asia Tilda Challenge Finals, hosted by professional chefs Cyrus Todiwala, Murray Chapman and Steve Munkley, as well as Jo Witchell of Tilda Foodservice.

With more than 90 entries, finalists from up and down the country from different colleges competed to be crowned the winner, taking home the prize of ‘The Best Dish’ including the use of Tilda Basmati Rice for Zest Quest Asia Tilda Challenge 2021.

Judges and Executive Chefs Adam Lestrelle from Roehampton Club and Jasbir Dawar from Hilton T5, accompanied our finalists in Hart Kitchens to taste, rate and observe how each dish was prepared and executed.

Each finalist had exactly 2 hours to prepare their dishes in front of the judges along with pictures and videos to accompany their entries to send to the panel of judges. The chefs were also required to provide details on the recipe, along with information on the history behind their dish and why they chose it.

Todd prepared ‘Buta No Kakuni’ also known as Japnese braised pork belly with Gohan rice.

Josh prepared a West Bengal spiced cod with mango relish, curried cauliflower purée and sada Pulao rice.

Level 3 Professional Cookery student, Todd said:

“I had an amazing experience where I got to let my creativity and skills shine. The challenge of creating and developing a unique dish was tonnes of fun and learning about Asian cuisine has opened my eyes to new possibilities and ideas for the future.”

Level 3 Professional Cookery, Josh Davies said:

“Taking part and getting through to the final of Zest Quest Asia has to be one of the highlights of my Level 3 course so far! I really enjoyed creating and developing my dish and competing against a high standard of young and upcoming chefs.”

Competition results were announced via Teams on Wednesday 31st March, where one lucky winner received a one-to-one masterclass with Chef Cyrus and a gift package to help them in their culinary career.
