A level 2 qualification in a relevant subject area passed with merit or distinction and maths and English at grade 9-4 (or Functional Skills level 2 or above) or be prepared to study this as part of your programme.

You will also be invited to attend an interview.

Future Study and Careers

Degree-level study at university or an apprenticeship. University courses include hospitality management or advanced culinary skills.

Careers include chef and cook, hospitality manager, confectioner and catering or bar manager.

IS THIS FOR ME?

This course is for you if you are interested in developing the key skills you have learnt over the last two years and apply this at a higher level of preparation and cookery.

You will develop a stronger understanding of how the industry works as a business and how elements such as food safety, gastronomy and advanced techniques will support your future career.

You will develop supervisory skills including food safety supervision in the hospitality industry, and put into practice gastronomy skills through planning events and evening functions, while working in conjunction with level 3 front-of-house students.

This will give you the knowledge and skills you need to decide what you will study next or be successful in the industry.

HOW AND WHAT WILL I LEARN

You will access inspirational teaching sessions to help you develop advanced skills and techniques.

This includes producing vegetable and vegetarian dishes, meat, poultry and game dishes, fish and shellfish, fermented dough and batter products, petits fours, pasta products, hot, cold and frozen desserts and cakes, biscuits and sponges.

You will complete either work-based projects or work experience allowing you to get a real insight into the industry.
