Entry Requirements
A minimum of three GCSEs at grade 2 or above and we will use your interview to make sure this is the right course for you.
You will need to provide a positive school report and have a keen interest in the industry.
Future Study and Careers
Level 2 in professional cookery or food and beverage service, progression onto an apprenticeship or paid employment in the sector.
This course is ideal for students with a keen interest in the hospitality and catering industry and will give you a great introduction to this diverse industry.
You will be introduced to industry topics such as food safety in catering, the hospitality industry, preparing and cooking a wide range of different foods, menu planning and healthier diets.
This course is assessed almost identically to the level 1 Certificate in Culinary Skills but the end practical assessments reflect the different entry requirements and progression opportunities
Your course will mainly consist of practical sessions in the skills and production kitchens and Hart Kitchens, our public resturant, with some classroom-based activities. You will work with several local employers through the year.
Areas for study include the restaurant, preparing and cooking food by boiling poaching and steaming, stewing and braising, baking, roasting and grilling, deep and shallow frying, regeneration and sold food preparation.
You will learn the skills you need for the workplace including customer service, communication, numeracy, organisational skills, team building and relationship-building.
You will also complete maths and English qualifications if you haven’t got them already as they are essential in this industry.
