Scott Liversedge - Head Chef at Redcoats Farmhouse Hotel

Paige macKay

“NHC gave the foundations I needed to build on my professional career.”

I started my course in Food and Beverage Management at NHC in 1979. I found my days at the college competitive but fun at the same time. I really enjoyed Patisserie lessons in particular. NHC gave me the opportunity to become the level of Chef that I wanted to be, so I would definitely choose NHC again if I had to make the decision.

In my job it is essential to manage different skills and abilities such as team building, management and menu planning. It is important to develop motivational skills and to be creative. I am proud of the reputation I have built up for the restaurant over the 22 years I have been working here. The College took a very important role in what I have achieved.

I have three main goals that I would like to achieve in my life. Firstly, I would like to be more recognised for the work I do; secondly, I would like to own my own small restaurant and finally I would like to become a College Lecturer to share all the experience I have.
